Bacon, Arugula, and Goat Cheese Linguini

Ingredients
- (12 oz.) Linguini
- (6 TBSP) Extra virgin olive oil
- (1/2 lb., cut into 1" squares) Classic Belly Bacon
- (2 cloves) Garlic, peeled
- (3 TBSP) Balsamic vinegar
- (4 oz.) Baby arugula
- (to taste) Salt and pepper
- (1 C) Panko bread crumbs
- (6 oz.) Fresh goat cheese, cut into 3 round pieces
Directions
Cook the linguini in salted, boiling water according to package directions. When done, drain and immediately toss with 1 TBSP olive oil.
Preheat oven to 400 degrees.
Cook the bacon in a large skillet over medium heat until golden and crisp.
Reduce heat to low, add the garlic, and cook until it just begins to brown.
Add 3 TBSP olive oil, the vinegar, cooked linguini and arugula to the skillet. Heat until warmed through and season with salt and pepper to taste.
Place the bread crumbs in a shallow dish. Coat the goat cheese pieces in olive oil and roll them in the bread crumbs.
Place the breaded goat cheese rounds on a baking sheet and bake for about 4 minutes or until cheese is warm and slightly bubbling around the edges.
To serve, divide the pasta mixture evenly between 3 plates or shallow pasta bowls and top each serving with a piece of baked goat cheese.
