Classic Potato Salad

Everybody needs a classic potato salad recipe for summertime backyard barbecues. One that is simple, delicious, and demurely plays a supporting role to the show stopping main dishes at your cook out. Serves 8.
Ingredients
- (3 lbs.) Yellow or red skinned potatoes, boiled, cooled and cut into bite sized chunks
- (4) Hard boiled eggs, peeled and chopped
- (6 TBSP) Mayonnaise
- (2 TBSP) Dijon mustard
- (2 TBSP) Dill pickle relish
- (1/2 tsp.) Salt
- (1/8 tsp.) Black pepper
- (1 bunch) Parsley, chopped and divided
- (1 tsp.) Paprika
Directions
Place the chopped potatoes and eggs in a large bowl.
Add the mayonnaise, mustard, relish, 1/2 bunch of chopped parsley, salt and pepper. Stir gently to blend -- try to avoid mashing the potatoes or eggs.
Adjust seasonings to taste (potatoes can really soak up flavors).
Refrigerate the salad until ready to serve, stir gently to redistribute flavors, and garnish with paprika and remaining parsley.
