Croque Madame
Here’s a fancy breakfast sandwich to get your weekend off to a delicious start!
  • Servings: 4

Ingredients

  • (4 slices) Artisan sourdough bread
  • (1 1/2 C) Grated Gruyère cheese
  • (2 TBSP) White wine
  • (1/4 C) Sour cream
  • (1 tsp.) Dijon Mustard
  • (1/4 tsp) Granulated garlic
  • (1/2 tsp.) Salt
  • (1/4 tsp.) Black pepper
  • (4 slices) Sliced Deli Ham
  • (4-8) Pasture Eggs
  • Butter (for frying the eggs)
  • Salt and pepper (for seasoning)

Directions

  1. Lightly toast the bread.
  2. Stir the cheese and wine together in a small bowl and set aside.
  3. In a separate bowl, mix the sour cream,mustard, garlic, salt and pepper.
  4. Spread each piece of toast with about 1 TBSP of the sour cream mixture, top with a slice of ham, then spread the rest of the sour cream mixture evenly over the ham slices.
  5. Dump the cheese and wine mixture out onto paper towels, and blot up the excess wine from the cheese.
  6. Sprinkle the cheese over the toasts and put under the broiler to melt.
  7. Meanwhile fry up 1 to 2 eggs per toast. Top each toast with the eggs and season with salt and pepper to taste.
