Kale and Potato Soup with Spicy Sausage

This soup will warm the cockles of your heart! Use the best stock or bone broth you can get your hands on (preferably homemade). Perfect for warming your belly and soul on nippy fall evenings! Serves 4-6.
Ingredients
- (1 lb.) Italian Sausage Links
- (6 C) Stock or Bone Broth (homemade is best!)
- (1 lb.) Potatoes, cut into 1/2" chunks
- (1 bunch) Kale, stemmed and finely chopped
- (to taste) Salt and pepper
- (juice of 1/2 lemon) Lemon juice
- (to taste) Grated Parmesan cheese
Directions
Slice the sausage into 1/2" rounds.
Steam the potatoes for about 15 minutes or until tender when pierced with a fork.
Bring the stock or broth to a boil in a soup pot. Add the chopped kale and sausage rounds and simmer for 12-15 minutes.
Add the cooked potatoes and lemon juice to the soup. Season to taste with salt and pepper.
Ladle into bowls, and top with a sprinkling of Parmesan cheese if desired.
Note: You could also just cook the potato pieces in the broth with the kale and sausage, but I like how the broth stays clear when I cook them separately and add them at the end.
