Pork and Pea Vine Noodle Soup

Pork and Pea Vine Noodle Soup
A perfect soup for those chilly spring days! Serves 3.

Ingredients

  • (3 T) Vegetable oil
  • (4 cloves) Garlic
  • (1 lb.) Ground pork
  • (1 pinch) Red chili flakes
  • (to taste) Salt and pepper
  • (4 C) Chicken stock
  • (3 T) Soy sauce or tamari
  • (1-2 bags) Pea vines, chopped
  • (1 TBSP) Fresh ginger, grated
  • (6 oz.) Soba noodles, cooked and drained
  • (3) Green onions, chopped
  • (3) Poached eggs

Directions

Heat oil in a large pot. Saute crushed garlic, pork, chili flakes, salt and pepper until pork is cooked through.

Add the stock and soy sauce. Bring to a boil, then simmer for 5-8 minutes.

Add the pea vines and ginger. Cook and stir until vines have just wilted.

Ladle the soup over the noodles in 3 individual bowls. Garnish with poached eggs and chopped green onions.
