Pork and Pea Vine Noodle Soup

A perfect soup for those chilly spring days! Serves 3.
Ingredients
- (3 T) Vegetable oil
- (4 cloves) Garlic
- (1 lb.) Ground pork
- (1 pinch) Red chili flakes
- (to taste) Salt and pepper
- (4 C) Chicken stock
- (3 T) Soy sauce or tamari
- (1-2 bags) Pea vines, chopped
- (1 TBSP) Fresh ginger, grated
- (6 oz.) Soba noodles, cooked and drained
- (3) Green onions, chopped
- (3) Poached eggs
Directions
Heat oil in a large pot. Saute crushed garlic, pork, chili flakes, salt and pepper until pork is cooked through.
Add the stock and soy sauce. Bring to a boil, then simmer for 5-8 minutes.
Add the pea vines and ginger. Cook and stir until vines have just wilted.
Ladle the soup over the noodles in 3 individual bowls. Garnish with poached eggs and chopped green onions.
