Rhubarb BBQ Pulled Pork

This pulled pork is simmered in a luscious homemade BBQ sauce that uses that quintessential spring treasure: rhubarb! The sauce has layer upon layer of flavor, but the recipe is super easy to make in your trusty slow cooker.

Ingredients
- (3-4 lbs) Pork shoulder roast
- (1.5 tsp) Kosher salt
- (1.5 tsp) Paprika
- (0.5 tsp) Smoked paprika
- (0.5 tsp) Black pepper
- (1-2 TBSP) Olive oil
- (1) Medium onion, chopped
- (3 C) Fresh or frozen rhubarb, sliced
- (0.5 C) Brown sugar (not packed)
- (0.75 C) Ketchup
- (0.25 C) Red wine vinegar
- (0.5 C) Bourbon (optional)
- (0.25 C) Soy sauce
- (2 TBSP) Honey
- (2 TBSP) Worcestershire sauce
- (2 tsp) Granulated garlic
- (0.25 tsp) Black pepper
- (0.5 to 1 tsp (or to taste)) Crushed red pepper flakes
Directions
Mix the seasonings for the pork together and rub it all over the shoulder roast.
Heat 1-2 TBSP olive oil in a dutch oven and sear the roast on all sides until it is golden brown, then place the roast in the slow cooker.
In the fat that remains in the pan, sauté the onion and rhubarb until the onion is translucent and the rhubarb is beginning to soften. Add the remaining sauce ingredients and bring the mixture to a simmer. Simmer for 5-10 minutes to allow the flavors to meld.
Pour the sauce over the pork roast in the slow cooker and cook on low for 8-10 hours.
Just before serving, pull the pork into shreds with 2 forks and mix the meat and sauce together.
