Sheet Pan Italian Sausage with Peppers and Onions
Put together a quick and easy weeknight meal with tasty Berkshire sausage links and Italian peppers and onions!
  • Servings: 4

Ingredients

  • (1 lb.) Italian Sausage Links
  • (2) Bell peppers, cut in strips
  • (1) Large sweet onion, cut in strips
  • (2 tbsp) Olive oil
  • (2 tsp.) Red wine vinegar
  • (1 clove) Garlic, crushed
  • (1/2 tsp. each) Salt, basil, and oregano

Directions

Preheat oven to 450 degrees, and line a sheet pan with parchment. Simmer the sausages for 20 minutes while the oven heats.

Place the sliced veggies on the sheet pan.

Whisk the olive oil and remaining ingredients together, then pour over the peppers and onions and toss to coat.

Roast the peppers and onions for 15 minutes.

Slice the sausages into 1/2" rounds and add them to the veggies on the sheet pan. Mix all and redistribute to make an even layer.

Return the pan to the oven and roast for another 15 minutes or until sausages and veggies are beginning to brown on the edges.

Serve over pasta, in a hoagie roll, or as is with a salad.
