Tender BBQ Spare Ribs

Ingredients
- (1-2 packages) Pork spare ribs
- (to taste) Dry seasoning rub (optional)
- (2 TBSP) Butter
- (2 cloves) Garlic
- (2 TBSP) Mustard
- (1/4 C) Brown sugar
- (1 C) Ketchup
- (3/4 C) Chili sauce
- (2 TBSP) Worcestershire sauce
- (1-2 dashes) Hot sauce (like Tabasco)
- (1 1/2 C) Water

Directions for the Ribs
Remove the membrane from the non-meaty side of the ribs. Use a sharp knife to get a piece of the membrane loose, then use your fingers to pull it off. This will allow the meat to slide off the bone when it is cooked.
If desired, generously season the ribs on both sides with your favorite dry rub. This was not necessary when using the BBQ sauce below because it has plenty of flavor by itself.
Wrap each rack of ribs in a double layer of heavy duty aluminum foil, and place them on a baking tray for ease of handling. Roast the ribs at 275 degrees for 2-4 hours. (3.5 hours makes them perfect!)
Directions for the BBQ Sauce
While the ribs are cooking, melt the butter in a saucepan and saute the garlic for 30 seconds or until fragrant.
Add all of the remaining ingredients and stir well. Simmer over low heat about 30 minutes, stirring occasionally, until the sauce has reduced and thickened.
When the ribs have finished roasting, slather both sides of the racks generously with the BBQ sauce. Place the saucy ribs under the broiler until the sauce darkens slightly and bubbles. Serve immediately with extra sauce for passing and lots of napkins!
