Lemon Dijon Roast Chicken
This classic roast chicken recipe is simple and lets the delicious flavor of our pasture raised Freedom Ranger Chickens shine through.
  • Servings: 6

Ingredients

  • (1) Pasture Raised Freedom Ranger Chicken
  • (1 TBSP each if fresh, 1 tsp each if dried) thyme & rosemary
  • (1/4 C) Dijon mustard
  • (2 TBSP) Freshly squeezed lemon juice
  • (1 TBSP) Olive oil
  • (1) Onion, quartered

Directions

  • Mix the mustard, lemon juice, olive oil and herbs in a small bowl.
  • Rub the sauce over and under the skin of the chicken.
  • Place the quartered onion in the cavity of the chicken.
  • Place the chicken on a roasting rack in a roasting pan.
  • Roast at 450 degrees for 1-1.5 hours or until the thickest part of the breast or thigh is 160-165 degrees (or no pink remains when you cut into the thickest part).
  • Tent with foil, and allow meat to rest 10-15 minutes before carving.

  • Serving Suggestion:  Serve with oven roasted potatoes (you can roast them at the same time as the chicken) and a fresh green salad.
